How are y’all doing in this fine -day of the week-? I am doing heaps of vegan recipes nowadays and I decided I would try to make the ones I have here but vegan style! So for the first recipe, I decided to make a yogurt cake. It is a super simple and quick cake to make when you have yogurt in your fridge and you don’t know what to do with it!

-Ingredients-
- 1/2 cup of soy yogurt
- 1 cup flour
- 1/2 cup sugar
- G0.3 oz/8g vanilla sugar
- 1/4 cup of vegetable oil
- 1/4 cup soy milk
- 0.4 oz/11g baking powder
-Instructions-
- Preheat oven at 180C/350F
- In a bowl, add the soy yogurt.
- Add the flour, sugar, vanilla sugar, oil, soy milk and baking powder. Mix well until you get a smooth batter.
- Oil and flour your cake mould. Add the batter in and let it cook for about 35 mins. Let it cool off before unmoulding your cake.
To make sure it is perfectly cooked, all you have to do is do the toothpick test! You don’t know the toothpick test? Let me explain, just stick a toothpick into the centre of your cake or cupcake. If there is wet batter on the toothpick, it needs more time in the oven. If it comes out clean, your cake is done!
It is one of my go-to cake to make when I want something different but I am lazy and I don’t want to whip something complicated. What I love about this cake is that it is super moist plus if you add (like I did!) chocolate chips to the batter it is even more delicious!
