Spicy Wheat Aubergine

-Ingredients-

  • 200 g quinoa or wheat
  • 1 aubergine
  • 1 yellow bell pepper
  • 10 cherry tomatoes
  • 1 onion
  • 1 tbsp coconut oil
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp ground cinnamon
  • 1, 400 g tin chopped tomatoes
  • 1/2 red chilli
  • A large handful of spinach
  • Salt & Pepper

-Instruction-

  1. Dice the onion and aubergine, cut the cherry tomatoes in half, deseed and dice the bell pepper and red chilli.
  2. Heat the coconut oil in a frying pan over medium heat, add the onion and fry for 5 minutes.
  3. Add the spices and let fry for a couple more minutes then add the aubergine and fry for about 10 minutes or until softened. You can add more coconut oil if needed.
  4. Add the cherry tomatoes and pepper with a pinch of salt and black pepper and let it cook for 5 more minutes.
  5. Add the tinned tomatoes and chilli pepper and bring to a simmer. Wait 5 more minutes.
  6. Remove from heat and stir in the spinach and quinoa or wheat.
