-Ingredients-
- 200 g quinoa or wheat
- 1 aubergine
- 1 yellow bell pepper
- 10 cherry tomatoes
- 1 onion
- 1 tbsp coconut oil
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp ground cinnamon
- 1, 400 g tin chopped tomatoes
- 1/2 red chilli
- A large handful of spinach
- Salt & Pepper
-Instruction-
- Dice the onion and aubergine, cut the cherry tomatoes in half, deseed and dice the bell pepper and red chilli.
- Heat the coconut oil in a frying pan over medium heat, add the onion and fry for 5 minutes.
- Add the spices and let fry for a couple more minutes then add the aubergine and fry for about 10 minutes or until softened. You can add more coconut oil if needed.
- Add the cherry tomatoes and pepper with a pinch of salt and black pepper and let it cook for 5 more minutes.
- Add the tinned tomatoes and chilli pepper and bring to a simmer. Wait 5 more minutes.
- Remove from heat and stir in the spinach and quinoa or wheat.
