Chocolate Creams

Hiya! Pour la recette en français c’est ici.

-Ingredients-

  • 25 cl whole milk
  • 25 cl heavy cream
  • 180g chocolate
  • 4 egg yolk
  • 50 g sugar
  • 1 tsp agar

-Instructions-

  1. In a saucepan, heat the milk, heavy cream and agar-agar.
  2. In a bowl, whisk the sugar and yolk together.
  3. Once the milk is warm, mix it with the egg and sugar mixture. Whisk to mix well.
  4. Bring the saucepan back on the stove and continue to cook the mixture until it thickens a bit more. DO NOT STOP WHISKING.
  5. Break the chocolate into pieces and add it to the mixture. DO NOT stop whisking until the chocolate is fully melted.
  6. Add it to small jars and let it cool outside then put it in the fridge for at least 2 hours before enjoying it.
